Baked Crispy Avocado Fries with Chipotle Dipping Sauce

Get ready to upgrade SNACK TIME.

The avocado is the ultimate nourishing snack. It’s source of healthy fats leave you feeling satiated and satisfied. Plus, it is loaded with antioxidants which are bound to make you feel 10 times more fabulous than a typical, store bought, super processed snack item would. I am not opposed to grabbing a spoon and going straight up into an avocado with a sprinkle of sea salt as a snack. Honestly, that is snack heaven!!! But if we’re looking for a bit of a spin on that, here’s another way to devour our favorite avocado for snack time. The California Avocado Commission inspired these killer fries!

Best part about these “fries”? Adding some crunch factor!! Seriously. The crispy exterior and creamy interior of these fries make them SO fun to eat. They’re playful and different. Definitely a sure way to spice up your snack game.

The ingredients are super straight forward, likely all items you already have in your pantry. Feel free to swap out the fresh dill with dried dill if you have it in your spice cabinet- or pretty much ANY other fresh or dried green herb! (Don’t you love a good flexible recipe?!) It can also be adapted very easily to be gluten free, grain free, whole30 or vegan! Simply use a gluten free flour or gluten free breadcrumb brand in place of the flour and panko.

I love a creamy, mayo based dipping sauce for any type of fries. I’m just a lover of everything creamy (ice cream, cheese, mousse, yogurt, AVOCADO…) so this was right up my alley. But the possibilities are endless- you could dip them in just about anything, or even nothing at all! Honestly, they’re so flavorful, that if you whip them up on their own without the sauce, you’ll STILL have a bangin’ snack!

Last note: this is also an excellent recipe to use when you have a bunch of avocados that are all ripe at the exact same time and you need to use them up before they go bad! Even if they start to get slightly speckled- you can still make avocado fries! Yum!

Baked Crispy Avocado Fries

Ingredients:

  • 1/4 cup Panko (or GF breadcrumbs)

  • 1-2 tsp Fresh Dill (or other fresh/dried herb)

  • 1/4 tsp Smoked Paprika

  • 1/4 cup Flour (or GF flour)

  • 1 egg (+ splash of almond milk)

  • 2 Avocados

DIPPING SAUCE:

  • 1 cup sour cream

  • 1/2 cup mayo

  • 2 tbsp dill

  • 1/2 tsp paprika

  • 1 adobo chili

  • 1/2 lime juice

  • 1/2 tsp salt

Instructions:

  1. Preheat oven to 375.

  2. Combine the Panko, Dill & Paprika into a mixing bowl. Season with salt & pepper.

  3. In a separate bowl, whisk the egg with a splash of milk, salt & pepper until beaten well.

  4. Slice the Avocado into small wedges to make “fries”.

  5. One at a time, dip the avocado slices into the flour (cover thin layer all over), then into the egg, and then into panko mixture and lay on a parchment lined baking sheet.

  6. Once all avocado slices have been dipped in the coating, bake in the oven for 10 minutes.

  7. Meanwhile, blend all dipping sauce ingredients together in a blender or food processor.

  8. Eat while fresh & hot and serve with dipping sauce!

Note: Doesn’t hold up well as a “leftover”. If not eating fresh, reheat in the oven to re-crisp them!
